Ghee Granola with Toasted Nuts & Coconut

Golden, crunchy and lightly spiced, homemade granola is one of the simplest ways to enjoy Lard Ass Ghee. As it bakes, the Lard Ass Ghee coats every oat and nut, creating rich, buttery clusters with a subtle toasted flavour that vegetable oils simply can't match. Served with thick Greek yoghurt and fresh berries, it's a wholesome breakfast that's just as delicious sprinkled over poached fruit for dessert.

INGREDIENTS
80g Lard Ass Ghee
3 cups rolled oats
1 cup pecans, roughly chopped
1 cup almonds, roughly chopped
½ cup pepitas
½ cup sunflower seeds
1 cup coconut flakes
⅓ cup maple syrup
1 tsp vanilla extract
1 tsp ground cinnamon
½ tsp sea salt
To serve: thick Greek yoghurt, fresh berries, honey (optional)

METHOD
Preheat the oven to 150°C (130°C fan) and line a large baking tray with baking paper.
In a large bowl, combine the rolled oats, pecans, almonds, pepitas, sunflower seeds, cinnamon and sea salt.
Melt the Lard Ass Ghee. Stir the maple syrup and vanilla into the warm Lard Ass Ghee, then pour over the oat mixture.
Mix thoroughly until every oat and nut is evenly coated with the Lard Ass Ghee mixture.
Spread the mixture evenly over the prepared tray, pressing it down gently with the back of a spoon if you prefer larger clusters.
Bake for 15 minutes, then gently turn the granola with a spatula.
Scatter over the coconut flakes and bake for a further 8–10 minutes, or until lightly golden. The granola will continue to crisp as it cools, so avoid over-browning.
Leave the granola to cool completely on the tray without stirring. If you'd like to add dried fruit such as cranberries or sultanas, stir it through once the granola has cooled.
Transfer to an airtight container for storage.

TIPS
Don't stir the granola while it cools. This helps create beautifully crunchy clusters.
Adding the coconut towards the end of baking keeps it golden and prevents it becoming bitter.
Store in an airtight container for up to 2 weeks.
Serve with thick Greek yoghurt, fresh berries and a drizzle of honey, or sprinkle over poached fruit for an easy dessert.
